Sweet Potato Waffle Hash

Sweet potato waffle

Today’s waffle is more of a hash brown version featuring sweet potatoes!

Sweet potatoes are one of the healthiest sources of CARBS.

What I love most about them is that they are like a dessert if you add a little stevia & cinnamon!

So this waffle recipe is one of the healthiest I have made! You’ve gotta try it!

Sweet potato waffles

Sweet Potato Waffle Hash

Sweet Potato Waffle Hash
Ingredients
  • 1 large sweet potato
  • 2 whole eggs
  • 1 tbsp melted coconut oil
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1 packet stevia
  • (applesauce for topping)
Instructions
  1. Remove the skin from the sweet potato
  2. Then grate the sweet potato
  3. Then add in the remaining ingredients and mix well
  4. Cook on waffle maker
  5. Then top with applesauce!

    Do you cook the sweet potato before removing the skin? Or remove the skin from a raw/uncooked sweet potato?
    And as for the applesauce – I’m sure any flavor/variety will do. What’s your fave?

    • Good question, it is uncooked and raw. I went with unsweetened applesauce since it is a bit healthier and less packed with sugars. 🙂
