Today’s waffle is more of a hash brown version featuring sweet potatoes!
Sweet potatoes are one of the healthiest sources of CARBS.
What I love most about them is that they are like a dessert if you add a little stevia & cinnamon!
So this waffle recipe is one of the healthiest I have made! You’ve gotta try it!

Sweet Potato Waffle Hash
Ingredients
- 1 large sweet potato
- 2 whole eggs
- 1 tbsp melted coconut oil
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1 packet stevia
- (applesauce for topping)
Instructions
- Remove the skin from the sweet potato
- Then grate the sweet potato
- Then add in the remaining ingredients and mix well
- Cook on waffle maker
- Then top with applesauce!

Do you cook the sweet potato before removing the skin? Or remove the skin from a raw/uncooked sweet potato?
And as for the applesauce – I’m sure any flavor/variety will do. What’s your fave?

Good question, it is uncooked and raw. I went with unsweetened applesauce since it is a bit healthier and less packed with sugars. 🙂
